Booth operating rules at the festival

Article 1: Food safety standards

• All participants must hold a food safety eligibility certificate or a valid self-declaration of product conformity.
• Staff who prepare and serve food must wear aprons, hair covers, surgical masks and hygienic gloves.
• Ingredients must have a clear origin, with invoices and quarantine documents as required.
• Each booth must keep food samples for a full 24 hours as instructed by the Hanoi Department of Health.

Article 2: Fire safety and electrical safety

• Each booth must provide at least one CO₂ or ABC powder fire extinguisher with an intact inspection seal.
• Do not tap into the power supply or use equipment above the capacity registered with the Organising Committee.
• Charcoal grill and industrial gas stove areas must have heat-resistant screens and stay at least 1.5 m from flammable materials.

Article 3: Operating hours and resupply

• Goods delivery and resupply window: 06:00 – 09:30 every morning. After 09:30, delivery vehicles are not allowed into the festival area.
• Trading hours for visitors: 10:00 – 23:00 continuously over the three days, 27 – 29 November 2026.
• From 23:00 to 24:00: clear the site, sort waste and take it to the designated collection points.

Article 4: Payment and booth identity

• The festival is cashless (NFC wristband), run on the Organising Committee's infrastructure.
• Booths must follow the signage design standards set by the Organising Committee for each food zone.
